** This recipe gets it's name from it's distinct lemony yellow flavor. A very appealing dish - even to those that are not "mad" about spice. Deliciously mild and delicate ...... But don't just take my word for it. Try it .......
Ingredients
· 1/2 teaspoon turmeric powder
· 1 teaspoon garum masala
· 1kg potatoes, boiled and quartered
· salt to taste
· 1 large onion sliced
1. Heat the oil.
2. Fry the onions. Thereafter sprinkle in a few mustard seeds, if they pop the oil is ready. Then add the remainder of the mustard seeds.
3. Add the various powders to the sizzling seeds and onions.
4. Fry this pungent mixture of oil and spices for 1 minute then add the potatoes. Fry for about 4 minutes until the potatoes are smothered in seeds and appear to have crispy edges. They will look quite yellow in colour. Cover the pan and on a low heat, cook the potatoes for a further 15 minutes. The dish will start to come together - potatoes will appear mushy. Finally salt to taste.
5. Serve immediately with rice (of choice).
6. Garnish on top of this curry - finely chopped mint or coriander. Enjoy.
